Live Fire Cooking Is a "Trend" That's Thousands of Years Old

I've been in this industry long enough to watch trends come and go, and right now I'm watching one build in real time: Santa Maria-style grills (also referred to as Gaucho or Argentinian grills) are everywhere. Search interest is up, manufacturers are expanding their open-flame lineups, and I'm fielding more customer questions about them than I have in years.

For anyone unfamiliar, a Santa Maria grill is built on a simple idea that's been around for over a century. A large open grate suspended over a wood or charcoal fire, raised and lowered with a hand crank to control heat. No electronics, no presets, no app. Just fire, and your ability to read it.

Why is Live Fire Cooking Suddenly Hot?

I think it comes down to a few things converging at once. Live-fire cooking has become genuinely aspirational. Just think about how many restaurant menus lead with wood-fired or open flame these days. At the same time, people are craving something that feels more hands-on after a few years of set-it-and-forget-it smokers and app-controlled everything. Cranking a grate up and down over open flame is tactile in a way a Wi-Fi connected pellet grill just isn't.

Open Fire Cooking Sounds Like Fun. Is it?

There's a social component that shouldn't be underestimated. A Santa Maria grill is a backyard centerpiece. It's visual, it's a little theatrical, and it gives people something to gather around and watch, not just wait on. That's tailor-made for the kind of outdoor entertaining moments people are already sharing.

If you're curious but intimidated by open-flame cooking, my advice is to start simple. Try a basic protein like tri-tip (fitting, given the grill's Central California roots) or a batch of vegetables, a manageable fire, and patience while you learn how your particular grill holds and releases heat. It's a different skill than gas or even a standard kettle, but it's not a hard one to build, and the payoff in flavor and experience is real.
